Easy Chocolate Mousse

Ingredients:
- 250 g 72% dark chocolate, chopped
- 3 eggs
- 2 tablespoons dark rum
- ¼ cup caster sugar
- 1 cup heavy cream
Instructions:
1. Melt Chocolate and Butter:
In a heatproof bowl set over a pot of simmering water (double boiler), melt the chopped dark chocolate and butter together, stirring occasionally until smooth and glossy. Remove from heat and set aside to cool.
2. Add Dark Rum:
Stir the dark rum into the melted chocolate mixture. Allow it to cool to room temperature.
3. Beat Eggs:
Using a hand mixer or a stand mixer, beat the eggs and sugar for about 5 minutes or until thick, pale and increased in volume.
4. Whip Heavy Cream:
In another bowl, whip the heavy cream until soft peaks form.
5. Combine Chocolate and Eggs:
Using a metal spoon, fold the cooled melted chocolate into the egg mixture, then fold in whipped cream. Work quickly and lightly until the mixture is just combined.
6. Chill:
Divide the chocolate mousse evenly between four 1-cup serving glasses or bowls. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
7. Serve:
Before serving, you can optionally garnish the mousse with a dollop of whipped cream and chocolate shavings for an extra decadent touch.
